This is a new recipe that I’m trying out from Bob Harper. I love Bob Harper!
Look at how colorful the breakfast is on my cobalt blue plate.
This breakfast has 270 calories, 26g protein, 24g carbs, 7g fat, 6g fiber.
- Olive oil spray
- 5 egg whites, lightly beaten
- 1/2 cup pico de gallo
- 1/3 cup cooked quinoa
- 1/4 avocado, sliced
- Heat a medium skillet over medium-high heat. Spray the hot pan with olive oil. Add the spinach and cook until wilted. Set aside on a paper towel to absorb the liquid.
- Respray the pan and scramble the egg whites. Toss in the pico de gallo and spinach to heat through.
- Place on top of the quinoa. Add avocado.
I realized after I ate this breakfast I forgot the avocado. Doh!
I must say, this is a very filling and satisfying meal. I like eating the same breakfasts each day, so I know I will not tire of this one for the week.
